Description & Tasting Notes “Looking out of the window from cheese-making, I can watch the cows of my milk suppliers grazing. They all graze within a radius of one kilometre.” Urs Leuenberger, cheese-maker and winner of the 2022 World Cheese Awards. Production of Le Gruyère AOP, the unique cheese from the French-speaking part of Switzerland, dates back to the early 12th century, already then the milk from the picturesque villages of the Gruyère region was processed by the local cheesemakers into a remarkable product with a unique character. This younger version, matured around 10 months, has a gentle, mild, nutty flavour with notes of vanilla, sweet cream and fresh herbs. The texture is smooth and supple, ideal for melting or slicing.Other Notes & Serving Suggestions This milder version of Gruyére is ideal for melting in fondue, slicing to include in sandwiches and baguettes, or makes a great choice for those wanting a milder cheese on a platter – serve with fresh fruit, berry jams and honey. It is very popular with children and also quite low in salt compared to other hard cheeses, so is a good choice for anyone on a reduced salt diet who doesn’t want to cut out cheese.
