Description & Tasting Notes A captivating cheese inspired by the unique aromas and character of the woods and meadows in the Langhe area of Piedmont surrounding Fattorie Fiandino – a small artisan cheesery committed to sustainable farming practices and making traditional regional cheeses. Carefully crafted in a ring shape, Ciambella Trifulò is matured for 60 days to develop a unique flavour that is a true reflection of the terroir of the Langhe and layered on the palate – a pronounced truffle perfume, a subtle earthiness, gentle hints of butter and cream and an overall lightness and balance on the palate. Under the dry natural rind, the texture is semi-firm and even, a delight to let melt on the tongue. Appreciate the true craftsmanship required to make such a perfectly balanced cheese, considering it is also made with thistle rennet.Other Notes & Serving Suggestions Its distinctive doughnut-shaped form, or ‘ciambella’ in Italian, makes this cheese an eye-catching centrepiece for any cheese board – serve with acacia honey and crispbread so as not to over-power the truffle notes in the cheese. It can also be served shaved over mixed leaf salads or crumbled on top of pasta and other dishes as a finishing touch.
