Description & Tasting Notes This is the young version of Asiago – it is made with whole milk from low-lying areas and matured for around one month. This relatively short aging means the flavours are still milky and sweet with an underlying buttery note and a slightly salty undertone. There may also be subtle lactic/yogurt flavours. The texture is supple and open with lots of eyes through-out the cheese – it is soft and smooth on the palate. Asiago Pressato, also known as Asiago Fresco is great for those wanting a milder cheese that still delivers on flavour. The DOP consortium branding is stamped into the rind of the cheese.Other Notes & Serving Suggestions Asiago Pressato is a versatile cheese. Serve it on a cheese plate with fresh fruit, or slice and use for sandwiches and panini. It also melts well and can be used in baked dishes.
