Description & Tasting Notes Stravecchio translates to ‘very old’ and this cheese requires minimum 18 months aging – which creates a delicious, rich flavour – but also a lot of work for cheese makers. The Presidium was established to recognise the value of this cheese as well as specifying the production area, that the cows must be pastured and most importantly, the best time for cheese production is in Summer. During maturation the natural rind becomes tough and leathery and the DOP consortium mark is stamped around the cheese. The flavour is rich with a slightly piccante note in very mature wheels. At first it is sweet with hints of chestnuts and rich, creamy milk, then a subtle fruity bite and balanced savouriness develop through the mid to end palate. The texture is firm and slightly granular/flaky, occasionally there are small holes throughout the cheese.Other Notes & Serving Suggestions A great addition to cheese and antipasti platters – serve with Grissini, Balsamic Figs or Mostarda d’Uva Dolce – an Italian grape chutney that is divine with full-flavoured, hard cheeses. Also delicious shaved over a salad.
