Description & Tasting Notes Appenzell has been made in the Swiss Alps for over 700 hundred years. This 6 month matured version is made exclusively with raw milk from cows grazing on pastures – not silage. It has a smooth, even, slightly supple texture with characteristic eyes throughout. The flavour is mild but rich: immediately nutty with a hint of fresh cream, mountain flowers and just a whisper of savouriness. During maturation the wheels of cheese are rubbed with a special brine solution that often includes herbs and sometimes some cider or other alcohol – this process helps to develop the rich flavours in the cheese and each cheese-maker closely guards their secret brine recipe.Other Notes & Serving Suggestions Appenzell is a great cheese for those who like a full flavour and a smooth, even texture that isn’t dry or crumbly – serve on platters with honey, fruit jams and seeded crackers or bread. It is a popular addition to a cheese platter and can also be used for melting and in fondue mixes.
