Description & Tasting Notes Sotto il Noce (‘under the walnut tree’) delivers a double dose of Tuscan terroir. Semi-matured wheels of pecorino are pressed with leaves from walnut trees before being matured further. The resulting walnutty and herbaceous notes elevate the cheese to a whole new level of flavour that is full, but not overpowering or strong. The vegetal notes of the leaves complement the grassy, sweet, nutty flavours of the sheep’s milk, with a hint of savouriness to finish. Il Forteto is a dairy cooperative using sustainable farming practises and creating cheeses based on traditional recipes that reflect the Tuscan terroir.Other Notes & Serving Suggestions Serve on cheese platters with honey, sliced pear and roasted walnuts, or on antipasti platters with cured meats and olives. Pair with medium-bodied red or white Italian wines such as Barbera, Sangiovese and Pinot Grigio or walnut liqueur.
