Description & Tasting Notes Cashel Blue is an Irish farmhouse cheese, hand-made by the Grubb family with milk from their own Friesian herd. It’s a smooth, medium-strength blue cheese – rich and buttery on the palate with a voluptuous mouth-feel and hint of sweet cream that keeps the salty blue-mould flavours in balance. The texture is dense and full with a buttercup-yellow colour and even blue-green marbling throughout. The natural rind contributes a hint earthy complexity to the flavour, and while edible can have a much more pronounced flavour than the interior.Other Notes & Serving Suggestions Cashel Blue has a wide appeal and thanks to its smooth, buttery flavour it won’t overpower other cheeses on a platter. It’s delicious served with dried muscatels, fig jam and thinly sliced fruit bread. The best beverage pairings for Cashel Blue are craft beers (particularly dark beers like Porters) and single malt whiskies with a touch of peat. In regards to wines, a Zinfandel or late harvest Riesling would work well.
