Description & Tasting Notes From the Morbidi family – a small dairy based in Tuscany making cheese according to traditional regional methods. This cheese is named for the local area around the dairy, called ‘Fogliano’, where their sheep graze on the unique local pastures rich with lush grass and seasonal herbs which give the cheese its characteristic flavour – buttery, grassy, with a slightly sweet, nutty finish. Cheese production begins within 24 hours of milking and small vats are used to stay as close as possible to traditional, craft processing.Other Notes & Serving Suggestions A delicious cheese to enjoy anytime, perfect on antipasto platters or cheese platters served with honey and fresh pear. Pair with your favourite Italian red wine – our favourite is Sangiovese, a classic Tuscan regional pairing!Region: Tuscany, Italy Milk: Pasteurised Sheep Rennet: Animal Size: Approx 1kg wheel, sold as a whole unit
