Hard Pecorino aged 60/150 days made from pasteurised sheep's milk from the Maremma area of Tuscany and Lazio with animal rennet. Chalky, slightly grainy and dry paste, pearl-white in colour. Inedible rind treated with tomato concentrate and ground pepper as anti-mould treatment.
