Description & Tasting Notes Casa Madaio are forth generation artisan cheese-makers and affineurs specialising in cheeses that reflect the unique history and character of Southern Italy. Sbronzo combines cow and sheep milk and is matured soaked in local Aglianico red wine and must. The combination of milks creates a richly flavoured, but subtly flavoured cheese with notes of fresh cream and salted butter. After maturing around 2 months, the cheese is then left to age in crushed grapes for approximately four more months, which impart a nuanced aromatic flavour to the cheese and create a striking purple rind embellished with crushed grapes.Other Notes & Serving Suggestions Sbronzo works well on antipasti platters or served on cheese plates paired with caramelised fig or chestnut mustard fruits.
