Description & Tasting Notes This is a traditional sheep’s milk cheese from Sardinia matured around 3 months to create a balanced, buttery round flavour with hints of cream, meadow flowers, herbs and subtle earthiness lingering pleasantly on the end palate. The texture is firm and compact with small eyes throughout. The Bussu family has been breeding Sardinian sheep for more than 50 years and has always produced traditional Fiore Sardo raw milk cheese according to thousand-year-old techniques. Their cheesery is located in the heart of Sardinia on the Campeda plateau and includes 200 hectares of pastures and meadows where sheep are free to roam and graze on the organic pastures rich with native grasses and flowers.Other Notes & Serving Suggestions Serve with Pane Carasau – traditional Sardinian crispbread, accompany with chestnut honey or pear and cinnamon jam, or serve with antipasti – this cheese is particularly tasty with olives and preserved artichokes.
