Description & Tasting Notes Scamorza is a young, semi-stretched curd cheese with a supple, smooth texture that’s yielding and easy to slice. It is made in a similar way to Mozzarella, but hung to ripen for around 2 weeks which results in a more compact texture. This process of ripening has given Scamorza its name, which in southern Italy means ‘beheaded’.Other Notes and Serving SuggestionsScamorza has less moisture than mozzarella so it melts well and is perfect for cooking – use in panini and toasted sandwiches, on woodfired pizza and in pasta and baked dishes.Region: Basilicata, Italy Milk Type: Pasteurised Cow Rennet: Animal Size: 250g, box of 10
