The Trebbiano di Lugana variety used in this wine is cultivated on the southern slope of Lake Garda, south of Sirmione. The soil is good and fertile, allowing the vineyard to give rise to wines of excellent structure along with the use of the most traditional technology in winemaking. 35% of the must ferments and refines in small, neutral 228-liter oak barrels for added complexity and texture. Hand-harvested in the cool early morning, the grapes undergo gentle pressing to preserve their freshness and delicate aromas. White vinification techniques include soft pressing, static decantation, and fermentation at controlled temperatures. Straw yellow colour with light green/yellow reflections and with a fragrant bouquet, presenting the most delicate hints of apple and mature pear. Elegant and light with a good intensity, it has excellent structure that is almost crisp yet still pleasant to drink. Good flavour, fresh and persistent, and will last 2-4 years in the bottle. The wine offers a balanced structure, freshness, and a persistent finish. Ideal with freshwater and sea fish carpaccio, octopus salad, and seafood risotto. Chef Sergio Mei recommends pairing with mackerel au gratin with herb bread for a delightful culinary experience.
