This wine goes through 5 days of maceration by shovel with frequent daily pumping, and then is fermented for around 10 days in concrete. Finally the Barbera is refined in steel vats and then wooden casks for nearly 1 year, with further ageing in the bottle (aged for longer periods if the vintage is of higher quality). When young the colour is ruby red tending to garnet after a few years, with a vinous and intense bouquet that becomes evermore ethereal. In the mouth it is dry, full-bodied and with good acidity - extremely tasty with considerable tannins, full and persistent. Luigi Oddero's Barbera d'Alba has the potential to age up to 12 years if kept correctly, depending on the vintage too. Best paired with risotto and pasta, and superb with poultry or game dishes.
