Ogg Sharpening with thousands of knives of many brands and types to their sharpening experience over the years the SO-70 certainly is on its own for us.Created by MAC for the Sole fish filleting gives it one of the most unique blade profiles i have ever seen.The flex can almost produce 90 degrees says MAC and it moves with such lite pressure.The blade spine is a mere .94mm near the  bolster and .64mm half way along and only .4mm closer to the tip and then a flat grind to the edge.What makes this knife remarkable is it has temper and real retention like a good chef knife does with such a fine blade.It takes great knife makers like Mac to make the thinnest  blades and this is certainly one of the finest there is.Yes filleting but in the kitchen it could do some of the finest cuts and tricks in the business making a cake and pastry chef’s eyes light up.
