$98.00 IN STOCK  The Global GS -61 160mm has considerable more duties and cutting power is increased immensely with our edge on this knife.Instead of a needle point which punctures and tears a small cutter is used instead but it can not ride like a plain edge as it is still broken.This edge will now cut a tomato ,carve a roast and of course cut bread.Sharpened as a single sided knife which is what a bread knife is, it is able to reach a incredible edge like all our plain edge knives polished out to a untouchable sharpness.The Ogg Sharpening edge will glide through the tough sour dough and barely leave a crumb on the NYLON CUTTING BOARD.(please no other surface for our edge).Great edge retention also coming in at a very nice hardness maxing out at 59 Rockwell C but i always find serrated knives are always higher feeling their retention lasting much longer.A favourite handle by many bringing  the knuckles away from the board and also allowing for smaller hands.Always love sharpening this knife with its very consistent temper and accuracy of manufacturing in Japan.
